What flour did you use? I was thinking Gram flour would be good, to give a kind-of onion bhaji style crunch to it.

I just used good old plain flour to be honest but think your idea is good. Also thought a Tempura type thing would work with Wild Garlic Flower Heads - you need something with surface area and air spaces to hold the batter mix I think.
