Cray fish

When you catch a crayfish, turn it so you can look at the underside of the claws.
The signal crayfish has red underneath the claws, which they show to predators - "signalling" danger.
When i cook them, I cut them in two down the middle, and grill them in garlic and chili butter.

When I was young and single and went out on my own into the wilderness,this was my staple diet along with eels,I just boiled the crayfish and fryed the eels,along with the odd wood pigeon cooked over the fire.Oh memories
