As with almost all things in life there is no universally right answer: it always depends

P.S. I have a basic Lansky system too and I use it on every new flat ground knife to put a nice and even bevel on it. [IMHO the Lansky system is the simplest and best system for max. 5" inch flat ground blades. The basic system is all you need (but you may want more

Once the bevel is set I keep it sharp with ceramic rods and strops.
