best knife for processing game birds

I think you've got this pretty well sorted.

Anyway here's my trout and bird - a Gerber tool steel with cast aluminium handle:

Obviously it got a bit of use over the years...
The one that I thought was a super design, and handy to carry was the Cold Steel with the loop, but a proper handle is required for wood carving if that is added to the requirements.

I think that when a great trout and bird knife is discussed that one is also talking about a good paring knife - but what makes one good is quite a subject for discussion...

Nice one Jimbo. Hard to beat those old Gerbers.

Thin and pointy is a must imo. My favorite is the Buck Kaala. It comes as a bare necker but I had scales put on one.

I like Red's assortment of tools. Pretty much mirrors what's in my small game bag.
