I'm currently carrying a Victorinox handyman as my pocket/companion knife often I will carry an opinel 9 both of these knives serve my purposes well.
I like the multifunction of the Victorinox, it sort of acts like my maintenance and repair tool alongside its general cutting duties.
The Opinel is an excellent kitchen and carving knife because of its super thin blade.

Manly Wasp in S90V steel.
UK legal slipjoint in excellent steel, stainless, holds a great edge, has strong detent positions at closed, 45, 90,130 degrees and fully open.
It is NOT a one handed opener, get over that issue and it's a nice tool.
Very slicey blade shape.
