Any one have any kind of experience carving with aspen ?

yes and it is excellent wood to carve...

Agree. Soft, buttery soft, but dries up surprisingly hard. Most of my cooking spoons, and a few bowls (all of which has lasted for years of faily use). Do note that it tends to draw up sand into the wood, and will therefore dull your tools faster than expected.
