Lard. Once you try lard to brown, and generally cook with, you will not touch butter or other oils again!

Also, that is what they would have used in thise days!

Very nice.

Last night, I cooked potatoes with rosemary sprigs in my oval cast iron pan. Today, I browned some coarsely chopped onions and whole mushrooms in butter with the same sprigs and some fenugreek and caraway, then took them out and browned a 1kg piece of back pork in the pan before putting the onions and mushrooms back in. Another hour and a half, and it will be done.
