Hi All,

As the title suggest, i would like to know everyones favourite pigeon recipes.

With the spring drillings about to make an appearance, i will be roped into crop protection on our farm. Looking to mix things up instead of the usual pigeon pie, pan fried breast etc. The dog might not get a look-in this year!!

I've made quite a lot of pigeon jerky in the past. I preferred it with some brown sugar in the mix (can't remember if that's classed as biltong or what) to counter the gameyness. If you dry it to a crisp and grind it to powder then it makes a good stock cube equivalent.

this is a great shout - funnily enough, im toying with buying a dehydrator - this could work quite well!
 
I like Pigeon as a meat - for a bird its a substantial almost steak like quality - is abundant and free.
Cooking wise I like it simple - nothing too complicated or fancy.


edit - I was going to add , Ever since i found out Pigeons mate for life I have had a crisis of conscience ref harvesting them.

ha ha always worth going for the left and right then ...
 
Either flash fried in butter (breast) and used in lieu of steak, or in a pie with Rabbit and some carrots and gravy. ( yes, i see you're looking for something different, but this is all i do) Depends how my mornings shooting went. Both lovely, just dont overcook it. Crow is awesome too flash fried, like a poor mans fillet steak.

I keep meaning to do a curry with it, like it do with Chicken liver. Just not been out with the rifle for a while.

thanks all - some good info here. will get my google on and look for the book. Pigeon curry! never considered it!! crow however, i have a problem shooting ... they look through my soul!! other corvids i have no issue dealing with, but crow - its like they know many things we dont ...
