they are really waterproof and not much thicker than a standard pair of liner gloves. No gauntlet so you shouldnt get as much water running into them. For extra warmth you could put a larger mitt over the top when you dont need as much dexterity.
I think whatever you go for the key is a modular approach and plenty of spares.

There are loads of types. You're as well doing a google images search rather than me posting links.
I used a wool pair for years but needed a bit more grip so changed to a pair of these and have been happy with them.
These ones aren't waterproof and have the same kind of cuff that you've said you don't want but the concept is sound so I just thought I'd mention them, someone else might make a pair that are a more suitable material for you.
 
At the risk of stating the obvious I see a lot of mechanics nowadays wearing those disposable latex gloves (think surgeon's gloves). Wearing those would at least keep your hands dry when they're out of the warm glove covering. Your dexterity wouldn't be compromised too much and shouldn't take too long to get used to using them if you did.

Sorry to read about the arthritis though. Over here in France they have a sort of miracle essential oil type thing that you take 40 drops of in water. I had tennis elbow for ages and a daily does of that soon saw it off. Our neighbour has a lot of joint pain and SWMBO mentioned this oil to her, she tried it and was amazed at the result.

Just dug the bottle out of the cupboard. It's called Harpagphytum Procumbens. Homeopathic medicine of course. The French are really into that sort of thing over here. Give it a go, gotta be better than anti inflams, too many of those and you'll have stomach problems on top of hurting hands.
