I managed to catch my first wild brown trout of the season on my first trip of the year this evening, and in honour of its life I gave it a special send off in the form of a foraged dinner. Served with tempura style hog weed shoots (dried wild garlic in the batter) and pickled chanterelles, dusted in dried wild garlic.

Can't quite believe how tasty it is. I'm just a bit peaved I didn't think do a parsley sauce but with ground elder instead of the parsley.

I bloody love this time of year :)
 
Where do you forage the dried garlic and pickled chanterelle.?

Asking for a friend.
Wild garlic from the local river :) just bossed in the oven at 100C for about 20 mins...

The chanterelles were from my secret spot in Dumfries and Galloway ;)
 
That looks amazing!

My first brown trout went back in after a kiss on the head. But I regretted that show of gentlemanly behaviour because I didn't catch another all day!
