Which yeast for Nettle Beer, Elderflower Champange and Ginger Beer

Hi

As the title says, can you recomend which yeast?

Have found ale, larger and wine yeast but wonder which one for which?

I had the same problem, I tried using wine yeast which had badly tasting consequences! For all of the above I use Muntons Gold brewer's yeast. It gives excellent results and is very adaptable.

elder has natural yeasts in the flower head. I made three batches last year and by far the best was with no added yeast. I used 2 litre plastic bottles and they almost double in size!

Currently reading the "wild life" (excellent book)

The author also suggest leaving your brew outside with muslin over the top to capture wild yeast!
