We just returned from a 9 day exped. in Northern Russia, carried all our food on our backs so it was all dehydrated stuff. Couple of lessons learned:
1. There is pretty much nothing that you cannot dehydrate; we did it with pasta sauces, meats, veg of all descriptions, stocks, soups....like i said, pretty much anything
2. No matter what anyone tells you...most dehydrated food tastes the same! Don't ask me why, but you lose any subtler flavours, so all the meats taste pretty similar, and only the strongest veg stand out.
I find taste and flavour seriously important on the trail, so my advice is to marinade any meats before you dehydrate them, include strong tasting veg like carrots and beetroots, and take lots of spices and herbs!!!
