I visited a friend on the weekend, and he was keen to show off his new kitchen knives to me.
I had a bit of a play and was well impressed. I don't know what the steel is, but it has a very high chromium content, and a razor edge. Hammered blades, 50 layers, I think.
I used the big one to cut lots of salami for the party we were having, and it was a joy to use. Effortless and clean cutting. I now have a deep kitchen knife envy, but my budget won't stretch to over £300 for 2 kitchen knives.
