Tried a new rabbit knife tonight (a very brief review)

Someone had mentioned using a carpet blade in a Stanley knife for paunching rabbits but they're a bit bulky. Stumbled across this in Sears whilst in Florida recently (no doubt you can get them over here anyway):

The blade can be easily changed without tools, and it's so compact and light, you hardly know you're carrying it.


Anyway, starting the cut is a little fiddly and you have to be very careful not to nick the guts but otherwise, it's as easy as unzipping... um... a zip. Paunched 5 tonight and blade remained sharp throughout. The knife is stainless so I can dishwasher it anyway but for about £3 I can't complain

I might try reprofiling the blade to lower the risk of nicking but probably just have to be more careful

Frankly, if I wasn't so concerned with piercing the guts (it's not as if I'm eating them as carpaccio) I could have had them done in record time. I still wear gloves when paunching but aside from pulling the stomach out, there's not much to touch. The butcher seems pleased anyway
