(First duel between Kenobi and Vader. A New Hope.)

(Duel between Kenobi and Maul, Rebels, season 3.)

But some is indeed swashbuckling....

Which brings the question - why would they use the sabres?
They have excellent pistols.

It is like that scene from one of the Indiana Jones movies: The baddie takes out his whip, and does a demonstration of his superior whipping skills. Indiana takes out his gun and shoots him.

Another one: There has not been much tech development over the 50+ years the Star Wars saga has run. Same guns, same fighting vehicles, both planes and space.
Actually the baddie took out a sword and did all that. They were leading the viewers to expect Indy to respond with his whip (which was the way it was written in the script) when he surprised everybody by just shooting him (which was ad libbed by Harrison Ford and they liked it so much they kept it in the movie)

.....A duel with real light sabres would look pretty much like a modern sabre duel, I think (technique-wise).

Maybe. At least they've written the script to have one light stick block another. I suspect the two would simply pass through each other unimpeded (or at best, slightly attenuated) the same way other electromagnetic waves do. Thus rendering any blocking and parrying useless.
