Birch yes definately, like carving firm cheese-when its green. But it needs to be fresh, if its stood outside on the ground more than a month or so it wil have stated to go, it just rots fast for some reason. Sycamore is a nice one, very food safe. Alder is more exotique, so to speak, a lovely pinky red orange and cream colour. Lime wood is also soft. All these are lovely to carve. I would avoid oak, ash, pine etc because of their strong grain structures which can be trickier to navigate. Cherry is nice too but difficult to dry without serious cracks appearing
