Shelf stable protein

Dry sausage can last remarkably well without refrigeration. How long are we talking? Hours, days or weeks? I did road trips with summer sausage and chorizo, days at a stretch.

Biltong is expensive, but you can make your own version with a dehydrator.
 
Over here, salamis are hung up on racks at ambient temperature... Not sure that this would be a good idea once started, but while the outer "skin" is intact, they're fine.
Matesons ( generic finest ingredients from Mr Dibbler ) type sausages and Pepperami come in sealed 'sheaths' - Don't think I could eat a whole Curled sausage ( jokes incoming ) in one sitting but I'd risk it for a biscuit and leave it over night. Only so much can go wrong in 24hrs.

I might have a go at that, I am fairly immune to the vagaries of best before dates

I'd get a vacuum sealer and do up my own. You're not looking to keep stuff for too long.
 
I read it, assume whatever you want to, its if little consequence to me. If you don't know what you want for lunch, you're beyond my help.

I believe Herman was asking as to what protein one would put in a vacuum sealed bag that is going to be made more shelf stable and enable to be left airside for a continued length of time in an unrefrigerated state.

I suppose anything is going to fair better in less air/oxygen than more but the options for off the shelf foods ( if you exclude Fish proteins ) seem somewhat limited -hence the questions.

Maybe I'm a bit less meticulous than others but I'd leave virtually anything, bar perhaps fish, that had been prepped and packaged in lunch bag (or whatever) for a day/length of a shift. I mean sliced bread isn't exactly renown for its longevity, nor ham salad, but you'll find salad sandwiches pretty much everywhere.

Op wanted something that stay edible for a longer period than one day/workshift.

Just to elaborate on the shelf stable bit, I would like to be able to bring a bunch of food in and keep it in my locker, just so I'm not trekking back and forth every week with loads of gear
 
Lidl do a whole range of ready cooked sachet bags of lentil mixes, rice, rice/quinoa, tuna and pasta mixes in 2 flavours. I eat a lot of these for lunch when on building sites where they have to sit in my either hot or very cold van for hours.
A little while back I asked a very similar question about ideas for "instant" emergency backpacking food/protein, the principal being the same sort of constraints that you have, locker storage etc- there were absolutely loads of useful and original ideas and suggestions there. I suggest you take a look at those

Mixed bean salads do tend to be a healthy and very filling option. Think the best thing maybe to get a list of different things you like and keep a mixed variation airside.

Also what fish have you tried that you've discounted them? I'm not a massive fan of fish ( which I am working at ) but there is a good range of fish in strong tasty/meaty/spicy sauces that I can easily manage which definitely taste more meaty than fishy , to me at least.
