I'm trying to find information on SF100 steel but, so far have only found relevant things in tools and stuff like bearings. Is this a good stainless knife steel? What is comparable to it?

SF100 makes a lot more sense now. Looks like it is a UK based razor blade steel similar to 14C27 and similar steels which should work good in a slipjoint.

It was on offer here, 2 for 1 (half price) so I bought a few bars in different dimensions to try a few ideas out. I quite like the idea of using a Sheffield steel :)

So far, I've not managed to put any time to it but I will soon.

SF100​

SF100 – Sheffield’s Stainless Steel. Originally conceived as a razor blade steel, SF100 is a fine-grained stainless steel, with a great combination of toughness, corrosion resistance, ease of resharpening and polishing. Similar in composition to AEB-L/13C26/14C28N it is a great cost-effective alternative.

Chemical Composition:-
C:Cr:Mn:P:S:Si:
0.68%13%0.75%0.025%0.02%0.4%

That looks like a great blend of properties for a working slip joint knife or, a classic kitchen knife and is very similar to 14C27 which is a 'classic' for those applications.

I have 2 Stuart Mitchell knives in SF100, great steel.
