There's no reason why you couldn't, some inflatables have really wide side tubes which can make a normal stroke tiring because of your posture, but that one doesn't look too bad.

I had an old Sevylor Ranger which is similarly shaped, I found it much easier to keep momentum whilst seated with a double kayak paddle. You'll find that if you use a single canoe paddle, inflatables have a habit of lunging forward with the stroke and then almost stopping again before you put the next one in, no problem if you're just pottering about but can be tiring if you're planning to do any distance.

Great fun though, especially if the lumpy stuff :)
