Rusty steel pan

Got a couple of catering steel fry pans at a good price but one had been outside and had got wet and has a little surface rust.
Just wondering the best way to go about cleaning them up and seasoning??
I know about cast iron but not sure if I should apply the same logic??

P's I've got all manner of tools wire brushes etc but thought I'd ask before I wreck anything

Put it this way; in that state, scouring it's not going to wreck the surface any more than it is.

Scour it clean, oil it and heat it, and see what it's like then :)

You can scour it. As Toddy said, it ain't gonna hurt it. And yes, all the principles of cast iron apply to steel pans as well.

Lob it in an acid bath (I use oxalic but even domestic vinegar will do). Leave it till the rust is loose and attach a wire brush to your drill or grinder, then scour clean.

Yep, that'll work. The only real difference in this and doing the same for cast iron is that steel cookware is usually much thinner; be careful not to remove too much metal in the process.

My favorite de-rusting "power tool" is an ordinary sand blaster.

I don't think that pan's that far gone..... I was thinking judicious application of the brillo pad and the green scourer, tbh.

A little soak.in vinegar and a scrubber does work as you can see from the photo.:D this is only a few mins work as I'm busy doing something else.

If you want to clean it quick rust and all as it's not that bad, household ammonia, but a brass wire brush works, or a polishing wheel probably on that as it's only a bit grubby, the surface is still pretty good. Household ammonia works wonders with your grills griddles ovens, but It reallly realllllllly stinks

That will clean up easily with a stainless steel scouring pad, then season it right away or you will be back to square one.

Then heated and oiled. ... it'll get another good burn over the fire before its used.

I struggled to get the heat on a camp stove but it's cleaned and protected now.

Yep come out well... I like recycling stuff it's in my nature.
We've only got a halogen hob here so had to use a camping stove which to be fair doesn't get hot enough quick enough.
Will give it a good cook over the fire and cook a greasy breakfast on in asap! 😆
