Recipie Ideas for Fungi, please!

After a week of rain. I took the kids out on Friday.
We stopped at one of our favorite fungi patches and found litterally hundreds of Chanterelles.

I gave the kids a bag each and instructions only to pick a few from each area.

When we got home I weighed our haul and have 3Kg of Chanterelles .

So, what do I do with them?

I'm planning on drying 1/2, but could do with some Ideas on how to cook them.

I already make a rissoto, and a light pasta dish with them but any other suggestions would be appreciated.

I like them sliced thickly and layered with slice tomatoes in a ovenproof dish - drizzle each layer with balsamic vinager and a good splash of lee and perins and a good sprinleing of freshly course ground pepper. If the tomatoes are dry a drizzle of tomato juce helps as you end up with a nice soupy sauce;)

top it with cheese, more black pepper and bung in oven for 30mins or so till it has reduced in volume by around 1/3 to 1/2 and the cheese is nicely brown

serve with thickly cut (preferably fresh and warm) bread
