My all time favourite factory knife for this sort of work was a Schrade Old Timer Sharp Finger, which some thieving scoundrel swiped last year :(

I think I've just acquired one of those. It says it's a Schrade Old Timer and has a short curved blade. Was in a total state with concrete?!!! on the blade.I'm trying to get an edge on it and clean it up at the same time.I don't think it will be a favourite as the handle feels tiny in my hand but we shall see.

Another thought on the original post: Knifebargains.co.uk have a Mossberg Bird & trout pair in one sheath.A friend has just bought them and they look good if you like Very minimalist design.Pretty sharp out of the box and not expensive I think.Could be worth a look.
Cheers , Simon

Thanks for all the advice fellas, I bought a thing called a Helle somethingorother today 'Eggen' I think. Anyway it looks pretty and has a sharp feel about it, so I shall give it a whirl.

The Marbles bird and trout is a very minimalist skinner and is a dab hand at prepping game in the field...

I use a stockman model slip joint folder for small game prep. it has 3 different blades that all have there uses, some people do prefer fixed blades or folders with locks but this works for me and you can carry one in your pocket for everyday use providing the main blade is 3 inch or less.
Loads of different company s make them. Mine is by Case xx

Helle Eggen is a great knife DN, good allround bush/utility knife that you should have no trouble keeping sharp !
Bigger than you need, but not TOO big for the job and great for many others!
Enjoy.
My best.
Chris.

Thanks Chris,
Oddly enough, the first thing I did when I got it home, was sharpen it. Now it's blunt :-( I managed to regain the edge using a kitchen steel, but I can't get the hang of this oil stone thing.

Lol!! How did you manage that fella!
I have never met a blunt Helle knife from the box ( or should I say tube ! )
No need to answer that mate, we have all been there ! Check out some of the tutorials on
here to get some grade 'A' sharpening advice ( And feel free to rub some oil into that nice birch handle from time to time! )
My best.
Chris.

I used one made by Schrade for years. The only complaint I had was they wore out too soon. That was my fault though. They come in various sizes and I was picking a size too small. It did the job quite well but a size larger would have handled the number of rabbits and squirrels I was cleaning much better. The harvest limit here is 8 rabbits and 8 squirrels per hunter per day. We always had a freezer full.

I hope you enjoy your new knife. I don't know anything about the brand or model you mentioned but if you like it what more can you ask!? If you look for something else consider a filleting knife as someone else suggested. Personally I've always liked those from Rapala, especially the wood handled ones. If you're around water long enough (like fishermen tend to be) sooner or later you'l appreciate the fact that they float. Different people have different opinions on what blade length is too long or not long enough. Small game doesn't really take much of a blade but if it's a folder, and it gets used often, a larger knife will last longer. If it's a fixed blade then how long a blade you need will have more to do with what species of fish you're catching. Sunfish don't require anything special but saltwater fish (if you're a coastal fisherman) are another story.. Either one will be easier with a flexible filleting knife.
