Nice reminder of another project to get done. I have the bison meat to dry,
I have some bison backstrap fat to render. Also some dried Saskatoons/Serviceberry = Amelanchier alnifolia
for the "gourmet" version.
Apparently, not much of that was eaten in the fur trading forts.
Most was saved for the travelling fur traders to stew up as burgoo.
Done up in bison-hide bags of 90lbs, the best was in 60lb bags.
Records show that Rocky Mountain House had an annual quota of 40,000 lbs.
The exact numbers are buried somewhere in the Parks Canada website.
Sides of bison, or quarters, are $3.00/lb on the hook, maybe another $0.50
to get it cut, wrapped, labelled and quick frozen. Think this last one was #14 for me.
