New years day dinner.......
I slow roasted a whole prok shoulder with vaguely Chinese spices. Dinner is egg fried rice with veg and some pork. 8kg will leave a lot for the freezer !
I'm sticking with the traditional southern New Year's Dinner menu: Blackeyed peas and hog jowl (for good luck) collard greens (for prosperity) and a glazed Virginia ham (Just because I like it and it's a nice change from the turkeys over the last two holidays) with cornbread (again, just because I like it and it sops up the pot liquor from the first two items well) Cooked the collards and the blackeyed peas and hog jowl yesterday.
I've got 2 turkey legs which I cut off from Christmas and left to brine.. It's going in the oven in about 10 mins or so, and will be accompanied by some spuds in duck fat and some mixed veg.
