It seems like a good idea, but doesn't the one side get sooty as your using the other?

Well maybe I should have said when one side gets black you don't have to clean it, you can turn it over and use that side!

Depending on the texture of the aluminum yes you can season it. I've seasoned a couple of anodised aluminum Dutch ovens and an old smooth griddle pan in the past.
