Finally managed to make this at a Meet at Rough Close this weekend.

Mussels, white wine, onion, garlic, butter salt and pepper:
Wash Mussels and remove beards, any mussels that don't close at this stage throw away.
Fry off onions and garlic in a little oil, throw in butter and Mussels, add wine and season.
Lob on lid and cook for 2/ 3 min. lift lid and stir once leave for another 2/ 3 min. Once cooked, discard any that haven't opened:
Serve with a French Loaf to soak up the juices:
