Here In Canada we have a show called Man Tracker.
The show teams 2 strangers up ( athletes, x-military, Hunter, Guides, etc..)and put them in the wilderness in some part of Canada.
They are givin a hour head start. Then a flair is fired from there starting point, to show Mt where to start.
The Fugitives then have 36hrs to make it to a mapped location before Mantracker and a guide for the area can capture them. The Mantracker and Guide are on Horseback, thats why a big lead is needed. Maybe 2 out of 7 get to the finish, and both Contestants and tracker really get into it!
Fun show, have yet to see an torrents around for it but maybe you'll have better luck!
Worth a look!

We've had a magnificently entertaining series on Discovery channel called 'Hunting Chris Ryan' which also involved a team of experts hunting down Chris Ryan, who showed some excellent skill and tricks to keep up his hunter force in all sorts of terrain.

It's an entertaining show, but my problem with it is that no matter how careful the prey are to conceal tracks, etc, they're still dragging a camera crew around with them, who likely aren't watching where they put their feet. Although I saw one where they crossed a sandy desert area, and dragged a bush behind them to sweep their tracks. So instead of looking for footprints, Mantracker just has to follow a broad swath of parallel lines across the desert. Maybe they hoped he'd confuse it with the tracks of a rare desert otter?
