Lefse Lompers!

Inspired by Skaukrafts recipe for Lompers on the recent Norway thread, I have been baking.

Very very easy to make and very very tasty! Just a matter of mixing mashed potatoes with flour until it seems right then throwing it onto a hot pan.

Looks very nice indeed!! What do you serve with them? Is it a savoury dish or sweet or can it be both?

Otherwise known as Potato Farls/ potato cakes/potato pancakes.

They are a staple of my backpacking food and get eaten regularly at home. Good cold, hot, dropped into cooking pasta (tastes like Gnocci) and freeze very well. They are 50p packet from most supermarkets.

I mix cheese, broccoli, herbs and whatever else is leftover in the fridge into cold leftover mashed potato. :)

My mate's mom used to make sweet lefse, she'd mix melted butter and sugar and you dip the lefse or pour it on top of the lefse. That was in Canada, her parents were from Norway. they were amazing, it's making me hungry seeing this thread!
