Which is a lame title.

But my cheese has dried out.

it resembles geological samples rather than food.

But im pretty sure its still edible.

What do I do?
 
Taste it? It's not like you are the first to taste Roquefort or Brie or some of the smellier spoiled cheese versions. :D
 
Ill see what I can do but Im not sure if it will even grate.

its like rock.

If it's hard and waxy it'll still grate. It does best on a fine grater for that though.
I genuinely like hard cheese so I leave some cheddar to dry out and I slice off the hard outer bit by bit to munch with fruit.
Sometimes I end up with too much though, so I just grate it up and use it for cooking.
