Good Cajun Jambalaya recipe?

Howdy folks!
I haven't had Jambalaya since my mother was alive and cooking, but I want to introduce SWMBO to the wonders of Cajun cooking, and I thought there'd be few better places to start than Jambalaya. Unfortunately, the cookbook with all her own recipes (She made the best oatmeal cookies and pumpkin pie! :( ) went with her, so I don't really know where to start.

So, anybody got a good traditional recipe for cajun jambalaya?

here is one an acquaintance sent me

1 lb sausage sliced thin like quarters
2 lbs chicken (thighs work well) no skin or bones
3 bay leaves
1 teaspoon salt
1 teaspoon white pepper
1 teaspoon garlic powder
1/2 teaspoon cayenne pepper
1/4 teaspoon black pepper

4 tablespoons margarin
1 large onion diced
1 large bell pepper diced
1/2 stalk celery diced
1/2 teaspoon tabasco
8 oz can tomato sauce
16 oz can diced tomatoes
2 cups white rice
3 cups chicken stock

Combine all seasonings (not tabasco sauce) into a small bowl and set aside
melt margarine in 4 quart sauce pan
add 1/2 each of onions, pepper and celery
stir in seasoning mix and sauasage
cook over high heat till onions are dark brown (20 minutes or so) stirring constantly.
Add remaining onion, celery and bell pepper AND TABASCOE sauce.
cook 5 minutes, strring occasionally
add tomato sauce and diced tomatoes, simmer 5 minutes, stirring constantly
add chicken and cook over high heat 15 minutes. stirring occasionally
stir in rice, mixing well
reduce heat, simmer 12 minutes
add stack, bring to a boil, reduce heat and simmer covered over very low heat until rice
is tender but firm (15 minutes)

it's quite good.

Cheers mate, but I was really looking for something without tomatoes - things with tomatoes and tomato sauces have a tendancy to hurt my stomach, and whether it's the tomatoes themselves or not it's sorta put me off them :eek:

I think (not entirely sure..) the presence of tomatoes is one of the things that differs Cajun Jambalaya from Creole Jambalaya...
