You need a knife and a piece of wood. The wood doesn't much matter.
If you are new to carving you could do worse than start with a nice piece of freshly cut ivy. It is soft and easy to carve, but dries hard afterwards. My main eating spoon is ivy.
If your a beginning carver I would sudgest alder or willow. They are easy to source and to carve, they stay realtively soft and easy to work even when they have dried out.
Try speaking to your local tree surgeon/arborists, etc. I get regular supplies from a local landscape gardener, tons of cherry, apple, laburnam, hawthorn, laurel etc
