Would someone be able to recommend something to coat knife handles with to waterproof them? I was thinking along the lines of some sorta oil, but all I've got just now is veg oil and maybe linseed

What do y'all use?

Cheers mate, I'm hoping to have made at least 3-4 knives before Christmas, so I'll give both the Danish Oil and the stabilised wood a go :)

My woodlander came from Ben Orford with a coating of Liberon Finishing Oil.
I picked some up at the local DIY store.

Can be used on spoons etc too as it's safe for eating utensils too. Leaves them a bit shiney (which I quite like and it brings the grain up beautifully), but very well protected.
