Would someone be able to recommend something to coat knife handles with to waterproof them? I was thinking along the lines of some sorta oil, but all I've got just now is veg oil and maybe linseed

Danish oil is what I use (and you don't have to travel to Holland to buy it ) which is water resistant and will go nice and shiny if the handle is sanded well. However, if you want true weatherproofing, either buy some stabilised wood or follow this guy's instruction and do it yourself here.
My woodlander came from Ben Orford with a coating of Liberon Finishing Oil.
I picked some up at the local DIY store.
Can be used on spoons etc too as it's safe for eating utensils too. Leaves them a bit shiney (which I quite like and it brings the grain up beautifully), but very well protected.
