Eggs - Recipes and Preservation

We will be expanding our laying flock soon, so eggs should be fairly plentiful again this year.

So, any favourite egg recipes you'd recommend?
I tend to keep it pretty simple when cooking eggs, but I'd like to get a few more interesting dishes under my belt.

Also, do you have any tried and tested methods/recipes for preserving eggs?
Dehydrating, freezing, water-glass(ing) etc.

I've never made century eggs but tempted.


I have however made Drug Eggs and they are very good.


I'm tempted to make Drugs eggs , let them marinade for 72 hours then pickle them.

I have no idea how long they might last but my grandmother buttered eggs to preserve them during the war.
She just rubbed butter into the shells of fresh eggs to prevent them from being porous.

This shows a number of ways to preserve eggs - they all work fairly well. We also did an exhaustive test on freezing in different ways if you are interested

Those Drug Eggs look very nice. There is talk of making some dishes for Chinese New Year, so I might contribute them. (I realise they aren't Chinese, but they would probably fit in quite well).

I tend to keep my egg recipes simple. Basically boiled, poached, scrambled, occasionally fried, a french style omelette with chives, or a tortilla de patatas (spanish omelette) Not the cheapest way this as you need EV olive oil to poach the potatoes, but damn its tasty. You can use the oil a good few times though. Vid below is the one i make it from.

Same, I keep it simple. Pretty much just boil them, stick them in a pocket and eat them at work... I think I watched too much Columbo growing up.

I've a big jar of pickled hard boiled eggs in white vinegar. Abpout a year old now, I keep them as a sort of protein backup. I've eaten a few and they are fine, just like the fish and chip shop ones.
I occasionally do pickled hard boiled eggs but with some chillies thrown in with them. They're really tasty done that way and extremely moorish :p
 
I love the spanish omlette/tortilla but sadly controlling my weight makes them a rare treat. There seems to be a lot of variation as to whether they have potato in them ? There are some youtubes by spanish cooks who use a lot of spiced onion but no potato.
Egg fried rice/stir fry's are another regular favourite, and chopped up hard boiled in tuna dishes and curries.

Deary deary me. I suppose the Second World War was a long time ago. If I never see dried egg again my life will at least be unblemished in that regard.
