A member of this parish wanted to know what's in my cook book. This is a peek inside.
All recipes are kid-tested and kid-approved.

First, a dessert for the bush = BBQ Banana.
You need a low fire of coals and a wire grill and a smallish pot.
Mix dark rum, butter, brown sugar and cinnamon in the pot.

Leave the skins on bananas. Lay bananas on their sides and slice in half.
Cut face down on the grill for approx 4 minutes then turn over for skin-side down for 6 minutes.
Plate and drizzle the hot sauce over.
If you were at home, a scoop or two of vanilla ice cream does no harm.

Next one for home (or a Canadian winter camp-out), you need a freezer.

A. syrup
Boil then simmer 10 minutes 2lb sugar and 4C water.
Allow to cool, enough for 4 recipes, keeps 2-3 weeks in the fridge.

B. Lime-Basil Sorbet (my brother calls these "adult popsicles".)
1C fresh lime juice (approx 6 big limes)
1C water
1C sugar syrup
12 fresh basil leaves, very fine dice. Garnish with basil leaves looks good.

Mix all in a dish and freeze to a slush. Blend smooth and load ice cube trays 1/2 full.
Freeze hard.
They don't keep. The sugar gets squeezed out of the ice for a gooey mess.
