Theres a few references to holly being poisonous, they don't however mention the toxicity levels if any concerning the bare wood or sap.
However the parrot references suggest not using it, and most perches are also chew toys essentially.
Take from this what you want.

I used to chew holly bark, and have drunk plenty of Yerba Maté (made of Patagonian holly) without any ill effects.

On the last Woodlore course I did they had one of those for the latrine site, and it also served as the engaged/vacant sign. The latrine was situated in a clearing surounded by Rhododendron probably a five minute walk from the parachute, so the toilet roll along with matches for burning the used loo paper was hung on a tree near the parachute.
