Tracking is an art that encompasses many different skills. You could be reading alot of different kinds of books... animal sign, awareness, weather, flora, just to name a few...

I'm a Tom Brown tracking student, so I am partial to him...That said, Id start with:
http://www.amazon.com/Tracker-Tom-Brown/dp/0425101339
then go right to:
http://www.amazon.com/Tom-Browns-Science-Art-Tracking/dp/0425157725/ref=pd_sim_b_title_5
also Paul Rezendes is a real good tracker and photographer:

the scouting manual on tracking is excellent - its actually a lot better than some of the full colour books out there in my opinion and will probably cost £2 or so.

there are 2 sides to tracking, the recognition of particular tracks and the mindset required to tune in. Its the mindset side that can be the most tricky - its the quality in the (usually African ) trackers that I admire most and its talked about very well in the scouts book.

also bob carss book is the best available, should find it for less than a tenner on ebay. Its the bible!

I'm a bit late on this thread - but if it still helps there's three I'd recommend:

The Preben Bang book has good diagrams and is pretty comprehensive.

The Hamelyn (Pope and Lawrence) one is quite technical going into strides gaits and track registration.

Ian Maxwell's book is pretty basic but at least it gives you more of an insight into how to track. I guess he wouldn't reveal more otherwise no-one would attend his courses. Simple guides and diagrams.

All three books have their place in my opinion but to buy just one I'd go for the Preben Bang book mainly because of the clear illustrations.

Pablo.

Gone feral...
If you're tracking people, have a look at 'Tracking Signs of Man, Signs of Hope' by David Diaz. Slightly military slant, but also good for SAR. Lots of stuff about aging tracks, counting tracks, dung, scent etc. Even has a whole chapter on aging corpses (nice!!) so useful for forensic, police as well...
