I am using a carboy glass thing to contain my blackberry whiskey. However, it is only two thirds full. Will all the air in the jar make the blackberries go off? They are swimming in the alcohol so are covered.... except for the very tops of a few that are peeking out of the liquid.

It'd be best to turn it regularly, but the alcohol will prevent any bacteria growing. I wouldn't leave blackberries in whisky for too long - I find it develops a woody flavour, rather than fruity blackberry.
