Keep it in a plastic bag except when you're working on it. Wood cracks because the outside dries and shrinks faster than the inside. If you keep it in a plastic bag most of the time, the moisture throughout will stay equalized, and it will have an opportunity to dry slowly.
As far as I know and thats not much for knife handles etc:
Cover the sawn edge with wax to stop it drying out to fast and keep it a cool dry airy place like the rafters of a shed for a year or so and hopefully it season nicely
