Defrosting the fridge and found some bacon that I'd forgotten about and so...
Bacon Muffins with cheese.
The recipe calls for hard cheese, I used cheddar and had no complaints.
Ingredients:
1 egg
2.5 ml milk
50 g of olive oil
150g plain flour
100g wholemeal spelled
coarse sea salt (to taste)
2 teaspoons baking powder
Black Pepper (to taste)
200 g bacon, crispy fried
50 g of hard, salt, cheese, for example. parmesan
(Optionally fresh chives)
Method:
Stir eggs, milk and oil together in a bowl.
Stir together flour, salt, baking powder and pepper in another bowl.
Stir the wet and dry ingredients together with a spoon until the dough is uniform and smooth.
You should shred or chop the bacon to a size that will suit the mouths you will feed.
Stir crispy bacon, grated cheese and a little finely chopped chives into the dough.
Spread batter into muffin tins or baking parchment and bake them at high heat (200 c), for about 18-20 minutes.
