Any good recipes for pickled beetroot?

Beetroots are ready for harvest. I've pickled lots each year but was wondering if anyone has recipes they'd care to share. I did a batch a few years ago that included brown sugar. It was fantastic, but I can't remember the proportions. Anyway, I'll be using Sarsons pickling vinegar as a base.

I know it's not what you asked for (I've always just plonked the beetroot in vinegar with just a few spices - no actual guide - I just plonk in what sounds fun at the time) but here's a beetroot chutney recipe that went down really well with the folks:

Ingredients:

* 3 Ibs Beetroot
* 1 Large Onion
* 1 Large Cooking Apple
* 12ozs Sugar
* 2tspns Ginger
* Level tspn Salt
* 1 Pint Vinegar

Method:

1. Cook Beetroot and dice into small pieces
2. Peel and dice onions
3. Peel and dice Apple
4. Put into large pan and add sugar, salt, ginger and vinegar.
5. Bring to the boil and simmer until ingredients are soft.
6. Fill jars and label.

Think I got it off the net somewhere but it's from my file of recipes.
