I suppose this is why places like Screwfix have stopped selling any form of knife online or any solvents. Does make life more difficult for those us who don't travel much.

So I've got a set of those Sabatier's and very good they are too. So if I put a big one in my rucksack to cut up my side of venison or whatever, can I be done for it?
And as a consquence if they decide I'm suspicous and check my house, are the rest of my big kitchen knives and cleavers breaking the law/"dangerously displayed in a knife block" etc, or just my folding knives in my sock drawer?

If your knife is in your bag for that set purpose and you're on your way to do that, and not stopped off at Tesco with it in your bag on the way, it's fine.

None of the other knives you've mentioned, kept at home, are a problem at all.

We’re prone to overthinking these things a bit here and setting off into the realms of paranoid fantasy. That remark isn’t aimed at either of you two guys, it just seems to happen a lot. I know several chefs who carry their knives to and from work, stopping for ingredients or even setting off with their gear earlier in the day so they’re ready for an evening shift. It’s not a problem. You’ll be cutting meat later, that’s fine.

Generally if you’re polite and come across as decent, honest and legit, like most of us would, then it’s not a problem if we’re sensible and use our discretion. The majority of police aren’t out to prosecute innocent wandering chefs, bushcrafters, gardeners, farmers, or anyone else who isn’t behaving inappropriately.

Agreed, My Ex certainly took her chef kit & knives to work every day. I think the bigger problem will be some of the young coppers over egging it and not being up on the legal detail. I don't expect the above scenario to happen, not least because I'm unlikely to take such a large knife camping.
But as I understand it, technically., it could happen, which shows how badly written this new sets of laws are. With luck, and and a bit of common sense, it would get thrown out of court.
