A few things spring to mind, ignore the pun; on the .22 thing for target, sell it and buy a 2nd hand hw 97 or 77 (77's come with iron sights, but not the 97) or AA xt in .177. .22 springers are quite popular with the bunny whacking crew

The safety thing, as you've sussed, can be an issue, you've cocked the gun seated a pellet and replaced the cocking lever. You aim, release the safety, and just then have to abandon the shot, for whatever reason.

There are a couple of options (However, kids don't try this at home). Holding the gun as if you were cocking it (pointed somewhere safe) pull the now slack cocking lever all the way back, brace brace brace and pull the trigger (making sure you have a firm hold of the cocking lever, it'll break your fingers if you don't), then you have two options; 1. use the cocking lever to slowly release the spring & piston back to the de-cocked position, or 2. same as before but allow it to travel forward just enough to enable full reengagement, by pulling it back to the cock position, and that should re-activate the safety.

It's all a bit dodgy, but provided you keep a firm hold of the lever it's not that hard to do safely.
