Thank you for the pictures of your new shop space. Certainly reveals a few of your priorities.
I'm also fond of really big work benches and desks.
Get the place dried out. Once you get mold, houses here are declared uninhabitable.

I have the reverse problem with extremely dry air here in the winter. Unpleasant static electricity sparks.
I have a cold water humidifier that I run if the outside air (furnace intake) is -10C or colder.
It helps to grow a lot of indoor house plants (herbs, etc)

Yes, I'm tracking the relative humidity but I'm not sure what level to get it down to.

I'm currently aiming for about 50% but we'll see how that works out in practice.

I had that one tailor made for me but I think the lady that made it has stopped taking commissions now unfortunately.

You got lucky then

I will have to keep on searching, do you know what material she used?

The shell is wool but the lining is synthetic of some kind.
