Anyone got any interesting Veggie meals for the camp fire??? When I say 'Good' I really mean ,Something where I won't miss my Meat.

Its not my choice but I had it thrust upon me when I found that 2 of my Scouts are veggies. Solution?... meat free sausages, 1 tin of baked beans, 1 cassarole packet mix, bag of frozen mixed veg and 2 veg stock cubes.

All turned out well and I was really pleasantly suprised. Add a jacket potato and you're set

The old veg ruby is always good.

chop an onion, a pepper & some garlic and gently fry in oil in the bottom of a big pot or d.o.

Add coarsly chopped carrots, leeks, parsnips, swede, cauli, taters, peas, & anything else you fancy.

Stir in half a jar of curry paste- Patak's Vindaloo is nice.

Add water to almost level with top of veg.

Bring to boil then reduce heat to gentle simmer for an hour or so.

20' b4 its done put equal quntities (by volume) basmati rice & water in a pot with a good pinch of salt and a coupla cardamoms.

Bring to boil, then jam a close fitting lid on and reduce heat to the lowest you can manage. Don't lift the lid for at least 15'; when you do the rice should be done.

Add a knob of butter and fluff it up.

Dish up with the curry

Sauteed onions, mushrooms, peppers, garlic and chillis in a dash of olive oil. Top off with a tin of tomatoes, kidney beans, a diced peeled apple, suare of dark chocolate and small tin of tomato puree and then stew over a camp fire for a great veg chilli

red's recipe looks good, dark chocolate and chillis's should really set that off and i'd imagine that there's enough depth of flavour there that you wouldn't even think about the meat (or lack thereof). the base of that recipe (onions, peppers, garllic, chillis in a dash of olive oil will serve you well as a base for all sorts of dishes, veggie or otherwise. i might even go so far as to say that if you started with that base you could add pretty much anything you had to hand and end up with a pretty good feed.

I think veggie sausages and beans is a great outdoor meal, but a campfire curry is the best thing in the world :D

How about some sort of Quesadillas? Heat a tortilla wrap in a pan, spread on some refried beans, perhaps add some jalapenos, then some mozzarella, fold up the tortilla, turn it over and press it down in the pan to heat through. Nice with a wild salad and sour cream if you have it with you. Nice and easy (and quick!)

I must admit that I mostly have boil in the bag, left over from issued compo. In the past I've used dried pasta in sauce packets when backpacking. they're supposed to be made up with water and milk, but just water works okay. When I use too much water I just add a cup-a-soup. When we're glamping we mostly use tinned stuff. Well mostly we eat out.

I know that this doesn't sound like it belongs in this thread but I am vegetarian, just not very adventurous when cooking at camp.

Veg chilli is always good, but my favourite is to mix boiled potatoes with grated cheese and greens such as spinach, and then pour beaten egg over the lot. Mix again, and sprinkle with more cheese. Than bake until the cheese on top browns and the egg mix cooks.

The result is filling and tasty and seems to go down well with most folks. I haven't tried a camping version yet, but it would be easy enough to do with a dutch oven.

Sounds good but I think you'll need another name for it. Quesadillos by definition need cheese (queso) Of course if we're talking about lacto-vegetarian you could add the cheese.
