The same thermal woollen long johns, with Craghoppers.
My legs, crotch and bum are fine. Its just my torso that is sweating up.

Ah, but, the legs are doing all the work and generating heat; they are using the upper body as a radiator.

You could try leaving off the LJs as part of your experimentation.:)

Well..... I am just back from today's walk. Nothing strenuous and most of it pretty flat. Only about three miles.

The sweating up problem isn't the Norrona Recon Jacket. I didn't take it. Today's weather here was overcast but bright, snow on the ground and temperatures just below freezing.

I started off with the woollen vest, Swanndri shirt and a fleece. A shemagh scarf tied very loose just around the neck, gloves and just a simple wool hat.

After a few hundred yards the hat and gloves came off..... the scarf was loosened further.... after a mile the fleece was unzipped most of the way. I kept generally much cooler, and my head and hands were chilly but OK. But my forehead was sweating (and hence cold) and when I got home I was distictly sweaty damp (and hot) inside the vest and shirt.

I pottered around the garden a while when I got home to cool off. I think it would have been silly to wear less in these conditions.

I guess I am just a sweaty bar steward.

It sounds like you'd be well suited to using a pile/pertex combination clothing such as buffalo or Montane(better value) with just a thin wicking base layer underneath.

Tried that today. Temperatures were a little warmer, just below freezing point, and snowing well all of the time. (About 3" in three hours). No wind.

I needed gloves, and hat down over the ears the whole time.

Feet and lower legs were just right
Knees and upper legs decidedly cold (just the Craghoppers, which deflected the falling snow OK though, and didn't get wet.)

Upper body with the thermal vest, Swanndri shirt and the Noronna jacket... body warm, arms fairly cold. No sweat, even under the small back pack.

So apart from the upper legs (one layer) and arms (only two layers here) which were quite cold, this was a vast improvement. I can't say that the three hours out walking was uncomfortable, and because feet hands and head were warm and everything dry I could happily have taken more.

The snow was pretty in the forest, and SWMBO laughed at the snowman who returned home. :)

Myself, I sweat very very much.
Goretex etc is next to useless for me unless I only sit around.
So its a base layer of wool, some midlayer according to the temperatures, and an outer layer of proofed polycotton to protect me from wind and insulate further more. On a windless day I may not wear the polycotton, on a windy but not too cold one only the woolen undergarmet and the polycotton and so on.
If its pissing with rain its a poncho I wear to prevent me from getting wet and cold.

All waterproof/breathable garments wont be able to let all the vapor pass you may produce.
Never ever, no matter what a manufacturer may claim.
Some add several sophisticated holes (zippers at the armpit for example), but basically these fabrics work at best when you
-stand still
-it is cold and dry outside.
