I meant, what shape and size are the bins? Just get a tape measure and measure them, height, width, depth. Do they have lids? Can they hold water?
That is better than guessing at how much flattish material might be salvaged.
I tend to think you would be better using them as bins for something rather than trying to cut them up and use them as raw material. If they are kitchen type stainless sheet, they will be some kind of austenitic stainless, but this can still be hardish where it has been bent or deep drawn.
Camp stoves, indestructible drip catchers, post industrial plant pots, mouse proof storage, lots of possibilities depending on what they are like.
