We (my wife) bought a nasty kitchen knife a little while ago. Nice size and handle, but the edge bevel was about 90 degrees, and the secondary bevel had been ground with RIDGES, ***. That sort of thing really annoys me - not only that people sell crap, but that they take good raw materials - stainless steel - and then make rubbish out of it.
Anyway, this thing was getting blunter and blunter. Until I read the info on this forum.
I used a rough stone to grind the secondary bevel down to the edge of the blade, a medium one to smooth it off and a smooth one to edge it up, finishing on the steel. Lovely - bare patches on my forearm and flat bits on my thumbs to show for it.
Then, when I was using it today...
....THE FRICKING HANDLE BROKE!!!!
Anyway, it was good practise, and I might glue it back on...
