Found an amazing load of wood hedghogs in the forest in the rain.. they don't usually stay around this late, and are in good condition (if a bit wet).. They're presently drying out in the oven, and I've also tried freezing a few as I've seen they go ok.

You can quite clearly see the spines on the last photo - they come off quite easily and I think this is one of the easiest 'shroom's to identify.

And the collection all prepared and ready for processing! I've taked the spines off these lot, as they are only edible when younger, I find they impart a bit of a bitter taste when they get to a decient size.

They're excellent - haven't seen any round here at all but am still hoping to find some more Velvet Shanks in good condition (ie, not monstered by the squirrels).
