I use a Victorianox swiss army tinker as recommended by Chris Lubkemann. Cheap, and easy to get sharp.
A very good point to start. In alternative I suggest Opinel, for a very cheap knife with carbon blade or flexcut. I've one and I love it, well tempered and the edge is long lasting

I'm a fan of SAKs for carving :) They hold a better edge that a lot of people give them credit for.
